It is pretty much Valentine's Day - what a ridiculous holiday. Anyways, I made these for a really awesome friend (and I take excellent care of my friends obviously). My friend said they were good (not sure if they were lying or not). The recipe I used is below.
Recipe:
- 5/8 cup of butter, softened
- 2 cups sugar
- 4 eggs
- 1 teaspoon vanilla extract
- 1 cup flour
- 5/8 cup baking cocoa
- 1/2 teaspoon salt
- 1 cup chopped walnuts
Frosting
- 1/4 cup butter
- 6 tablespoons milk
- 3 tablespoons baking cocoa
- 2 cups confectioners' sugar
- 1/2 teaspoon vanilla extract
- additional chopped walnuts, optional
Directions
- In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Add vanilla. Combine the four, cocoa and salt in a separate bowl. Gradually add to creamed mixture and mix well. Stir in walnuts.
- Spread into baking pan. Bake at 325 degrees for 40-45 minutes or until done.
- Meanwhile, melt butter in a saucepan over low heat. Remove from the heat; stir in milk and cocoa until smooth. Return to heat and bring to a boil. Boil for four minutes stirring constantly. Remove from the heat; stir in confectioners' sugar and vanilla until smooth. Frost warm brownies. Sprinkle with walnuts.
- Yield: about 20 servings
